We smoke our BBQ on a traditional offset smoker with hardwood using a mix of hickory, mesquite, and pecan without the use of artificial ignition products. We source our meat and produce from local producers and local established suppliers.
BBQ is not cooking or culinary arts...it’s a sport and adventure! For more than thirty years Dave Fako has pursued his passion for casual and quality food, especially BBQ and grilling, as a family and neighborhood cook, Pitmaster at Big Ed’s Shed BBQ & Grill and Catering, and as an assistant to the Chef at the Forge: Lemont Quarries.
Dave focuses on BBQ in the authentic style of southern roadside BBQ shacks, with an interesting twist toward the “craft” of unique, quality BBQ. Dave Fako explores the traditions in the Carolina, Georgia, and Tennessee (Memphis) styles, with a nod to the Kansas City and Texas traditions. Dave also explores other culinary adventures including Mexican, southwestern, Cajun, Eastern European and coastal seafood.
Big Ed’s Shed is named in honor of Dave’s late Father, Ed (Big Ed) Fako, a truck driver who enjoyed life to the fullest. The Shed is an ode to him and unique quality food everywhere. Cheers!

Styled after the sauces of the western Carolinas and a close relative of the eastern coastal sauces, with a blend of cider vinegar, tomato, brown sugar, and spices for a light and tangy BBQ sauce with medium heat.
Memphis is known for their pork ribs, usually served “dry” with no sauce, or “wet” with a tomato based sauce. Our Memphis style sauce is a mix of tomato, vinegar, brown sugar, molasses, and a blend of spices to create a lite sweet and tangy flavor.
German and European immigrants that settled central South Carolina and northern areas of Georgia developed mustard based BBQ sauces, considered the second oldest style of American BBQ sauce. This blend of mustard, cider vinegar, molasses, brown sugar, herbs, and spices creates a bold and unique flavor for the true BBQ enthusiast.
